Chef Joel Peña created bacon cotton candy for sale at Texas Motor Speedway in 2013, earning local, national and international fame.
The first step (beyond getting a cotton candy machine) is to cook the bacon, chop it up into little pieces and then pack it in the sugar to be used for making the candy. After a few hours (or overnight), the flavor and aroma of the bacon will have steeped into the sugar; sift out the bacon and use the bacon-infused sugar normally.
Once the cotton candy is whipped onto a paper cone, it is sprinkled with Candied Bacon for a whole new level of awesome.
